Why My Samba POS Interface is different from what I see in Pictures?? I have just Black and Light Menu! 
Its like V4 but with more options!
Enable custom navigation and build default buttons from program settings > maintenence. If you turn on black theme you must shutdown sambapos and restart it too see it. Finally checkout the v5 tutorials section of forum it has great tutorials for custom navigation.
