How can i not define Service Tax on one menu?

i have 10% service tax on all my menu item except for one. how can i define not to include service tax for one particular category in menu ?

If it is a Tax Template, it can be mapped down to the Product level, but if it is a Calculation Type, I don’t think this can be done.
