Inventory problems

Hi, we downloaded sambapos5 trial version, to see how it works. I got stuck at one point. I set up products, recipes, I ad a purchase transaction. Than I closed a work period, opened again, but for some reason I see how much meet we have on stock, but it’s not taking the sold amount out of it. Any idea? We will buy it if it’s works properly, but wanna try first. Thanks
