Is this how I should do it if I want to be granular with items or is there a better way?

Personally I don’t use mapping, like several others I use an order state.
I have a kitchen print, bar print and coffee print state which is set on order adding based on a custom product tag.
This gets set as print then printed sinilar to the default new and submitted status filter on default print method however it means I just leave mappings and define what prints where on a per product basis using a custom field on each product.
