Subtotals, syntax and Thai

Hi
I’m new to SambaPOS and have a couple of questions:

1. Is there any documentation (e.g a Syntax diagram which documents use of variables and which variables are available)?
2. Can I show subtotals e.g food vs drink on the POS screen (I’ve seen documentation for showing it on tickets etc but not on the order screen)
3. Has anyone done a Thai language implementation
