I am testing the Mobile client offsite. I have a backup of our database. How can I do that? Because it is offsite, it is in Trial Mode. I need to test before we put it on the live environment, and I would like to test it against our database.

You need a license for it and valid license for the Sambapos. You can deactivate licence at your live venue and activate it off-site or you can get a second license for off-site.
Or just use built in test function to see how it works. Just don’t connect it to your database and login with 1234
You cannot test with your database. But you can test forever with our database
