Well because of my little knowledge i would like to clear my concept for how to change the individual dish item status from submitted to delivered and display at the ticket.
lets suppose if pilav gets delivered to the customer first and pide dish takes time. am i able to select the pilav item and change its stauts from submitted to delivered.
i know need to change the state of the item. will this happen through modifier tag?
Order States and Order Tags are not the same mechanisms and they have different purposes.
If you want to change the State of an item, you would use the Action called Update Order State.

No way to change colors on POS display order line, as far as I know.
