Could you please help me how to set up “Change Table Color after Paid”?
For example, if one table is paid already, i want to remind waiters to clean this table. Only after cleaning, set Table “Available” status.

You will need to change the state flow for entity. Do so with caution as you could cause issues.
Off top of my head you should be able to change entity available state rule to set say dirty state.
You would then need to add a button/command to change to a avilable after cleaned.
Alternatively you could prevent ticket final close until cleaned but that would require additional changes and possibly leaves open to ticket getting altered after final payment.
