As now header is not automatically populated on adding menu item and will show product name if not overidden is there perhaps the opertunity to be able to set a default display format?
I like the $1\r$2 format I saw on one of marks screenshots but that obviously means setting all headers and then updating when adding new products.
Perhaps a field in menu options for default header display format.
This would obviously be for menu items only not custom buttons and header field would overidden.

Yes I noticed that need too. In fact we need default format for both menu and category.
I’m planning to change how we store menu configurations in database. I can implement it while doing that.
