How to do an open tab?

So… how to do an open tab? I know I could just leave a ticket open but the problem is we can’t end work period with open tickets. So how can we set up a way to keep track of how much food employees ate through the week so we know how much to deduct from their paycheck. They get a 50% discount and we know how to do that were just wanting an easy way to keep track of things so we don’t have to close the tickets and then that throws off how much money we should have sonce were not actually paying for the food at the time. And we’ve had times where regulars that we trust we would allow to come back and pay a tab. I usually just use ticket note and put persons name on it but like I said we can’t have open tickets in order to end day so how do we get this to work.

Use pre-order tickets then just convert them to real ticket on payment. Or use employee Or Customer accounts and just have them pay their account.

How would we do a preorder ticket? Reguardless of it we send/print, whenever we close the ticket it changes the status to submitted.

Preorder is not instead of submitted its a separate ticket condition.

Yes that’s exactly what I want so we can add up their total ordered food at the end of each pay period without having to close the tickets so we can end work period each day.

Id use accounts to do this, have an individual account for your staff, pay each ticket onto the account. You cant track inventory with pre order tickets and the sales figures dont update until the ticket is paid so of you need accurate inventory etc id use accounts instead
