Can I set up tickets screen to only show open tickets to the cashier . I dont want my cashiers to be able to view all tickets at all.
Not with ticket explorer. You can setup a custom entity screen and use a ticket lister and have it only show open tickets. You can then give your cashiers access to that. You can edit the widget so when you click on a ticket it opens it in the POS view.

That is a Custom Entity screen that I made called Kitchen Display. I gave it its own department via mapping so when I pressed the Department Kitchen it would go directly to that screen. You can also make Automation Command Buttons and put them on the POS ticket screen if you do not want to use departments.
