I saw this video on Youtube for making self service kiosk using Sambapos V5. This is really really interesting but i can’t seems to find any guide or tutorial on the forums here for it or on V4 forum…
Can anyone advise how we can achieve something like that? or something simpler.

Not in V4.
In V5 would could make something simpler using the GraphAPI whats built in to latest version of V5 but this would need to be built from scratch as a web app interacting with samba through the API.
You would need to contact samba direct for more info on their setup as it propriatory and not openly released/discussed on forum.
What you see is a special proprietary software running on specific hardware designed by SambaPOS developers. It is not something you can just setup. It is not just a configuration in v5. They actually programmed it specifically for that with GQL, JSCRIPT, and possibly other methods.
