This might not be legal to store such information.
If so. How can I get a payment on a credit card by phone?
By tapping it directly into the card terminal and this way you would know whilst the customer is on the phone if it is authorised.
There is no way to type the information directly to sambapos.
I want to say though its vey likely that its illegal, its very dangerous in itself. Imagine loosing some information and getting it in the wrong hands or being hacked. Youll lose all your customers. No one will trust your restaurant.

You can store any information… For an example you can read [New 4.1.7] Asking Action Parameter Values tutorial to learn how to create custom dialog screen to enter values.
However as @Isaac suggested storing credit card numbers is illegal. Don’t use this feature to store credit card numbers.
How to remove credit card button on the payment screen
Manage->Tickets->Payment Types->Credit Card
Remove the mappings to disable.
