What are you lookng to acheive in your innstallation? Just a standard menu?
kitchen screen, inventory/products, reports, tips, personalized menu, actions and more options. I a IT specialist but understand some features of samba v5.
If your are an IT Specialist, you should be able to do it yourself. Samba is designed to be pretty easy. Its all GUI based!
IT specialist is a person for database, develop, print or someting but i not work now on a restaurant and some options of specific configuration because some times not work fine, if is a problem with hardware, printers, virtualization, servers, windows configuration or someting same if easy for me but if you think a IT is a specialist on specific POS system for restaurants are you wrong.

Mount a Linux on high avalibity and connect a firewall between 2 enterprice is easy for me… The complex of task depend on day to day expertise… I use many day try to make a ‘simple’ kitchen display on v5 and not complete without errors… Not subestimate rest of person

Samba is just an SQL database 
give it a go… I think you’ll be surprised at how quickly you can learn how samba works especially with a logical IT mind.
Pretty much 90% of what you’ll be doing if constraints and rules not to dissimilar to setting up a firewall or software programming. The advantage of samba is you don’t need to know the code as 95% of things can be gone using the samba user interface which really simplifies the process once you get the basics.
