Conduments which state the order sepecifics eg cold or warm if its beef rare medium or weldone

I would like to put a request on the follwings

1. how do i define conduments that will instruct the chef or bar man the sepecific or eg

beef - server rare, weldone
Drinks and soft drinks to be cold or warm

if this is possible then it would allow the waiter and the chef or barman to provide the order as requested
