Think the reason no menus are showing is because you haven’t got the menus defined in the two ticket type settings you’ve shown above
Where it says POS menu in both ticket types you need to click and select the default menu you want to load when that ticket type is used and then save it
Try that and see if that fixes your issue

Main Menu -> Manage -> Settings -> Departments. There is an option to set the Default Menu on each department.

Ive done that, the same issue still occurs.

Ive been through that, still happened. Then I cleared the database and seem to fix the issue for now.
