No menu defined

Hi all ,some guest are coming in our hotel for meetings ,wedding events,photo-shots,swimming, play-station, skating,conference etc.Since we have an ideal garden.These guest are received in the reception area and the reception defines what is the ideal package for the guest,so we don’t have defined menu.
I have managed to set up sambapos on restaurant and its working fine ,i wanted your thought on how i can set up the reception area so that the software can help me to issue tickets for those coming for other services that aren’t defined by the menu.
